Pesto pasta – Rotini with basil and pine nut pesto, spinach, heirloom cherry tomato, and artichoke

Week Two – June 9/June 12

Cauliflower Taco bowls – with Spanish rice, beans, fajita veggies, and cilantro ranch

Week 3 Entree – June 16/June 19

Coconut crusted tofu – with bok choy and grilled zucchini over sesame rice, with sweet chili sauce
